Διερεύνηση της δυνατότητας ανάπτυξης μιας Εφοδιαστικής Αλυσίδας περισσευούμενου φαγητού: μελέτη περίπτωσης σε εστιατόρια και μονάδες μαζικής εστίασης στην περιοχή της Θεσσαλονίκης

Abstract

Η παρούσα εργασία αφορά την εφοδιαστική αλυσίδα περισσευούμενου φαγητού, δηλαδή του φαγητού που περισσεύει από τα εστιατόρια και τις μονάδες μαζικής εστίασης. Στη βιβλιογραφική επισκόπηση περιγράφεται η αλυσίδα εφοδιασμού, τα πεδία εφαρμογής και το αντικείμενο των logistics ενώ περιγράφονται και οι ανθρωπιστικές εφοδιαστικές αλυσίδες. Ακόμη παρουσιάζεται το θέμα του περισσευούμενου φαγητού αλλά και οι λόγοι σπατάλης φαγητού στα νοικοκυριά και τον τομέα εστίασης. Η υλοποίηση της έρευνας για τη διερεύνηση της δυνατότητας ανάπτυξης μιας εφοδιαστικής αλυσίδας περισσευούμενου φαγητού έγινε με ερωτηματολόγια που απευθύνθηκαν σε 32 επιχειρήσεις που δραστηριοποιούνται στο χώρο της εστίασης στην περιοχή της Θεσσαλονίκης. Από τα αποτελέσματα της έρευνας προκύπτει ότι οι συμμετέχουσες στην έρευνα επιχειρήσεις έχουν ανεπτυγμένο το αίσθημα της ανθρωπιστικής βοήθειας, διαθέτουν περισσευούμενο φαγητό, έχουν τη διάθεση να το διαθέσουν και να συμμετάσχουν στην οργάνωση μιας εφοδιαστικής αλυσίδας σε συνεργασία με άλλους κοινωνικούς φορείς.

Initially, the literature review is an introduction to supply chain and logistics, describing the supply chain, fields and the field of logistics application. Then referring to the humanitarian supply chains. Here, preceded the capture key definitions, describes the importance of humanitarian supply chains in modern supply chains and the main differences between commercial supply chains and humanitarian supply chains. Still, are the main challenges to the humanitarian supply chains and how to measure performance in humanitarian supply chains. Then we have a reference to the leftover food. Specifically mentioned food waste takes place in Greece, but also waste food purposes in households and the catering sector. The implementation of the survey to investigate the possibility of developing a logistics what remains food chain was by questionnaires sent to 32 companies active in catering in Thessaloniki.
